Ilocos Longganisa (Philippine Chorizo)

I grew up in Cagayan Valley and that’s how I came across one of the best delicacies of Ilocos region (Cagayan, Ilocos Norte, Ilocos Sur, etc.) - longganisa or Philippine Chorizo. Ilocos longganisa is often referred to as derecado or mabawang na longganisa because of it’s distinct garlicky and salty taste. This type of longganisa is best eaten with vinegar (especially Pinakurat vinegar) to further enhance the taste.

Ilocos longganisa is truly a favorite. Since we moved here to Manila, we rarely got the chance to eat this delicious delicacy simply because we cannot find anything like it at grocery stores. Just recently, mom was able to contact her best friend who resides in Cagayan and requested that she sends us some longganisa -yay!

So how do we actually cook longganisa? See below for the steps:

  1. In a pan, drop the longganisa and then add 1/8 cup water.
    Cooking Longganisa
  2. Cover the pan.
  3. Set the fire to medium or high heat and bring the water to boil. Wait until the water has completely evaporated.
  4. At this point, oil from the longganisa will come out. Do not lower the heat to produce a slightly crunchy crust.
  5. While holding the handle and the cover of the pan, toss the longganisa to ensure that all sides are cooked equal.
  6. Wait for a few minutes more or until the longganisa is cooked before turning off the fire.
  7. Drain excess oil before putting the longganisa on top of paper towel.

    Naku, favorite ko tong Vigan chorizos, Kat. At ang masarap din yung galing sa Tuguegarao, lalo na pag na-bless ng mga madre from Saint Paul University Tuguegarao :-) And also the ones from Dumaguete. Kaso ang tagal lutuin e. Di ba puedeng i-microwave ang longganisa?

    Question: bakit yung mga niluluto kong longganisa nagpuputukan, and by the time iahon ko sa pan, sumambulat na lahat yung meat? Di ba dapat na pino-poke ng fork yung longganisa pag niluluto?

      Hi Ms Moi! Thanks for visiting Kitchen BQ. Nope di pede i microwave ang longganisa =) Re your question, there are several reasons why nagpuputukan ang longganisa:
      - di maganda yung ginamit na bituka
      - maluwag ang pagkatali sa bituka
      - ni poke ng fork ang bituka
      - super duper high ang heat tapos super fatty yung napunta sayong longganisa (di kinaya ng bituka ung oil)

    Hi Kat! Masarap nga yung longganisa. Jen followed the instructions you gave here in your blog. Dami nga oil na lumabas. She just used the oil to cook some eggs and made fried rice (minus the garlic). Complete na breakfast namin.

    I’ll going to ask Merl later how she prepared carbonara using the longganisa.

      Hi Allan, thanks for the feedback =) I’m happy that you liked the longganisa. You can also use longganisa as a bread filling if you don’t feel like eating rice for breakfast. Glad to know that Merl was able to use the longganisa in a whole new different way.

    good afternoon,
    after being transferred to zamboanga after 8 years assignment there in region 2, i missed those good lomgganisa breakfasts at hotel roma. is it possible to send it over here in zamboanga? how many kilos minimum order? what is the storing it so it will not be rancid? how many weeks will it last if i store it in the freezer? thank you
